Yuzu kosho is a paste made from yuzu zest and chillies and can be used with all kinds of dishes for a zesty kick. Yuzu kosho mayo is perfect for dipping lightly cooked tenderstem broccoli or cauliflower or dabbing on avocado and prawn sushi rolls. It will keep for several days in the fridge and is great in sandwiches too.

1 teaspoon red yuzu kosho (or more if you like it hotter)

2 teaspoons 100% fresh yuzu juice

  1. Combine the mayonnaise with the yuzu kosho.

  2. Gradually mix in the yuzu juice.
